BLAIR’S KRISPY KREME BREAD PUDDING

Taken from the book “Drop Dead Gorgeous” by Linda Howard

You Will Need:

2 doz. Krispy Kreme glazed donuts, torn into little chunks
3 eggs - beaten

1 can sweetened condensed milk
1 tsp. vanilla (Use more if you like a stronger vanilla taste.)

½ stick butter - melted

Cinnamon to taste

1 can of fruit cocktail

1 cup chopped pecans (optional)

1 tsp. nutmeg (optional)

Put the Krispy Kreme chunks in a large bowl and set a side.

In a large mixing bowl, mix together eggs (beaten), condensed milk, vanilla, melted butter and cinnamon. Mix in donut chunks. It will be too dry, but now you have to make a choice.

Pour in a can of fruit cocktail with juice, which gives the pudding enough moisture. The fruit cocktail cuts down on the sweetness.  Or, if you don’t want fruit cocktail, start adding milk a little at a time until the texture seems right to you.  Not so moist that its like soup, but moist enough that its like a lumpy cake batter.

Add chopped pecans and nutmeg  to the mixture if you like and mix well.

Pour into Use a 13 x 9 inch glass baking pan and bake 30 minutes in oven at 350 degrees. Check with a toothpick and if it’s not done, cook for another 5 minutes and check again. Take it out and let it cool.

If you don’t want a glaze (but the pudding looks naked on top) use canned cake icing. Talk about sugar overload!
